Nero di Troia

The newest born, HELENA, is a wine that represents the highest qualitative expression of the winery’s production.

Born to represent a real oenological challenge, HELENA is a Nero di Troia from vineyards over 50 years old, which is incredibly surprising for its excellent organoleptic characteristics. A wine which, in its first vintage, has already taken on important stages, including Buckingham Palace, and which represents the real challenge of the South, and in particular of Puglia, to the great elegance and complexity of French wines.

WINEMAKING

The grapes, harvested after a slight over-ripening,
are destemmed and crushed.
The alcoholic fermentation with maceration lasts about
20 days at a controlled temperature of 24 °C – 26 °C.
During fermentation, frequent pumping over and delestage
are carried out.
